【懶人黑椒芝士意粉 Cacio e Pepe】

材料 Ingredients:
意粉 Spaghetti | 80 g
牛油 Butter | 20 g
黑椒碎 Ground black pepper | 1 tsp
意大利綿羊芝士 Pecorino | 80 g
本菇 Maitake mushroom
做法 Directions:
依照包裝上的時間減1分鐘去烹煮意粉。
把芝士磨碎。
同時間,在一隻平底鑊中加入牛油,以中細火炒香黑椒碎,關火。
當意粉完成,撈起放入平底鑊中,加入芝士碎開中大火拌勻。如有需要,加入少量煮意粉水兜炒。
在另一隻平底鑊中把本菇炒香。
把意粉上碟,再放上本菇和多刨一些芝士碎便完成。
Cook the spaghetti one minute less than the time of the instruction on the packaging.
Grate the cheese.
At the same time, add the butter in a frying pan and heat up the ground black pepper over low-middle heat for one minute and turn the heat off.
When the pasta is done, get them into the frying pan and add the grated cheese. Cook and toss over medium-high heat. Add a bit of the pasta water if needed for emulsifying the sauce.
In another frying pan, saute the maitake mushroom for 1-2 minutes.
Put the pasta on a plate and place the mushroom on top. Grate a bit more cheese over the pasta.
