【賭場焗蜆 Clams Casino】
賭神鍾意食朱古力,不過去賭場其實應該食焗蜆~
呢道源自美國羅德島州(Rhode Island)嘅名菜,喺新英格蘭地區非常流行。簡單易做,而且賣相吸引~ 最好嘅係可以一早準備好之後,夜晚開party或者宵夜想食嘅時候即刻焗嚟食~ 如果你覺得蜆,只可以豉椒炒或者用白酒煮,咁你而家就知道仲有其他好食嘅方法啦!

材料 Ingredients:
蜆 Clams | 10-12 pcs
煙肉 Bacon | 2 slices
麵包糠 Breadcrumbs | 50 g
牛油 Butter | 10 g
乾蔥 Shallots | 2-4 pcs
蒜頭 Garlic | 2 cloves
白酒 White wine | 80 ml
巴馬臣芝士 Parmesan cheese | 25 g
意大利芫荽 Parsley | 2 sprigs
黑胡椒碎 Ground black pepper 1/2 tsp
粗鹽 Coarse Salt | "
做法 Directions:
首先將煙肉切成小塊。在一隻平底鑊中,用中火把煙肉的油分逼出和煎脆。將煙肉拿出。在同一隻平底鑊裡連同煙肉逼出來的油份,加入麵包糠。用中火烘至金黃色便可倒出備用。喜歡的話,可以把煙肉切碎成粗粒。
煮蜆。在一隻小鍋中,加入牛油煮溶,再加入乾蔥碎和蒜蓉,用中細火炒香。放入蜆隻,再把火力推高。濽入白酒,放上蓋子。讓蜆隻煮大約2分鐘直至全部打開。然後把蜆隻拿出,把剩下來的汁液繼續以中大火煮至餘下60-80毫升左右。
當蜆隻放涼後,把蜆隻沒有肉的那半邊殼除去。
把焗爐預熱至攝氏220度。將麵包糠、煙肉、已切碎的意大利芫荽、蜆汁和黑椒碎拌勻。將混合物放在蜆肉上,輕微用力按實。放入焗爐中焗4至6分鐘直接表面金黃色便完成。
First of all, cut the bacon into small pieces. In a frying pan, render most of fat out over medium heat until crispy. Remove the bacon. In the same pan with all the remaining fat, add the bread crumbs and toast them over medium heat until golden brown in color. Remove from pan and reserve for later use. Chop the bacon into coarse grains texture if you prefer to do so.
Cook the clams. In a small pot, add the butter and melt it over medium heat. Then add the chopped shallots and minced garlic, cook for about 3 minutes until it’s soft and fragrant. Put the clams in and turn heat up. Add white wine and cover the lid immediately. Let the clams cook for about two minute or so until they all begin to open. Once opened, turn of the heat. Pick out all the clams, and turn the heat on again and reduce the liquid to about 60-80ml.
Once the clams cool down completely, remove the empty half shell of the clam by twisting it. Reserve the side with the flesh on for later use.
Preheat the oven to 220C. Mix the bread crumbs, bacon, chopped parsley, clam liquid and black pepper together. Pack a spoonful of mixture over the clam and lightly press the mixture until it sticks onto the clam nicely. Bake the clams for 4-6 minutes until it’s golden brown, then the dish is ready to be served
