【惹味炸扭扭粉 配 邪惡芝士醬 Cavatappi Pasta Chips w/ Cheese Sauce】

材料 Ingredients:
扭扭粉 Cavatappi | 100 g
粘米粉 Rice flour | 4 tbsp
菜油 Vegetable oil | 1.5 L
- 調味粉 Seasoning -
洋蔥粉 Onion powder | 1/2 tsp
蒜粉 Garlic powder | 1/2 tsp
甜紅椒粉 Paprika | 1/2 tsp
鹽 Salt | 1/4 tsp
黑椒碎 Black pepper | 1/4 tsp
羅馬綿羊芝士 Pecorino | 20 g
- 芝士醬 Cheese Sauce -
麵粉 Flour | 10 g
牛油 Butter | 15 g
芝士片 Processed cheese | 4 slices
牛奶 Milk | 60 ml
甜紅椒粉 Paprika | 1/4 tsp
糖 Sugar | 1 tsp
鹽 Salt | 1/4 tsp
黑椒碎 Ground black pepper | 1/4 tsp
煙肉 Bacon | 2 slices
意大利番茜 Parsley | 1 sprigs
做法 Directions:
首先煮一鍋滾水,煮意粉至熟透。完成後撈起放在盤上攤涼,約10分鐘。
意粉攤涼後,與粘米粉拌勻。
同時間做一隻碗中,加入所有調味粉材料,拌勻。
煮一鍋熱油至攝氏180C,把意粉落油鍋炸大概4-5分鐘。完成後,撈起瀝油,與調味粉和刨碎的羅馬綿羊芝士拌勻。
製作芝士醬。把麵粉和牛油煮成麵糊,加入牛奶、鹽、黑椒碎、甜椒粉、糖和芝士片,煮約3至5分鐘。關火,淋在炸扭扭粉上,再放上番茜碎裝飾便完成。
Boil a pot of water and cook the pasta until completely soft (not al dente). When done, remove the pasta from the water and transfer on to a tray. Let them cool completely.
When the pasta has cooled down, coat them with rice flour.
At the same time, mix all the spices together to make seasoning.
Heat up a pot of oil to 180C. Deep fry the pasta for about 4-5 minutes. You may have to do it in 2 or 3 batches. When done, take the pasta out and drain off all excess oil. Mix them with the seasoning and grated pecorino.
Make cheese sauce. Cook the butter and flour and make a roux. Then add the milk, salt, black pepper, paprika, sugar and processed cheese slices in, cook for 3 to 5 minutes. Pour the sauce over the deep-fried pasta. Garnish with some chopped parsley. Done!
